Uncle Buck's BBQ

The road to restaurant ownership has been an adventure for Brian Gardner (aka Uncle Buck). The first building he was interested in required too much repair and retro-fit, and Buck backed away from the project.

The Wilkes University Small Business Development Center (SBDC) was there to assist the good uncle in finding a more suitable location and preparing a knock out business plan. Tom Healey, along with graduate students Carla Reino and Brett Digwood, was assigned to help Buck fulfill his vision of owning the best BBQ restaurant in the Wilkes-Barre area.

The perfect space soon became available. The Wing House in Plymouth, Pennsylvania was a successful restaurant with an owner ready to retire. The building was sound, the equipment in good shape, the interior was in nice condition, a liquor license was included, and the price was right.

The Wilkes University SBDC got busy and helped Buck put together his business narrative and a three year financial pro-forma. A grand opening was arranged and was covered by the local papers. In addition, the SBDC assisted Buck in merchandising his prices guaranteeing a 65% gross margin. The consultants also helped in redesigning his menu.

The SBDC's engagement with Uncle Buck's BBQ engagement will continue in the future as the team assists Buck with operational and marketing issues.
